    Corbin’s Interests this week

    Corbin is getting ready to crawl! We can tell he wants to move so badly because he will always get in this stance and whine and kick his legs like a little froggy but he doesn’t get anywhere. He has mastered going around in a circle as he follows us, but can’t seem to move, and when he moves a little it is always backward! Poor guy, we can’t wait until he figures it out, we know he will love being mobile!

    Every morning I watch GMA (Good Morning America). It is my way of waking up and bracing me for the day. Corbin usually just plays as I eat breakfast and watch my favorite morning show, however, whenever those new Target back to school commercials come on he freezes in his tracks and watches it, mesmerized! It is cute when it happens because he’ll be doing something and when that “ABC” song comes on (if any of you have watched it, you’ll know what I mean, it gets stuck in my head all day!) he immediately drops whatever it is and looks for the TV. I tried catching it on film one day, here it is:

    One Pan Chicken Alfredo

    I wanted to share an easy, yummy recipe that we had last night. Of course I was so tired by the end and having Corbin whine (we are in the process of dropping his 3rd nap, so he is a bit cranky in the evenings!) that I forgot to take a nice picture of our complete meal hot and ready. So you get a picture of it the next day! I served it with our favorite bagged kale salad.

     One Pan Chicken Alfredo

    Recipe type: Dinner

    Prep time:  5 mins

    Cook time:  25 mins

    Total time:  30 mins

    Serves: 4

    Ingredients

    • 3 tablespoon of olive oil
    • 1¼ pounds of boneless, skinless chicken breasts
    • 2 cloves of garlic, minced
    • 1 14 oz can of low sodium chicken broth
    • 1 cup of heavy cream
    • ½ a pound of penne pasta, or any bite-sized shape pasta, uncooked*
    • 2 cups of freshly shredded real parmesan cheese
    • Salt and pepper
    • Flat leaf parsley for garnish

    Instructions

    1. Start by cutting chicken breasts into 1 inch pieces. Season with ½ a teaspoon of kosher salt and a few turns of pepper.
    2. Brown chicken in olive oil over medium high heat.
    3. It does not need to be cooked through at this point, it will continue cooking as it simmers.
    4. Once chicken is browned, add minced garlic and saute for about one minute.
    5. Add chicken broth, cream, and uncooked pasta to pan and stir.
    6. Bring to a boil, then cover and reduce to a simmer.
    7. Simmer for 15-20 minutes or until pasta is tender.
    8. Remove from heat and stir in shredded parmesan cheese.
    9. Season with salt and pepper as needed.

    Notes

    Note: Keep pan covered while pasta and chicken simmer.

  • Banana Bread

    Banana Bread

    A young woman made banana bread for me for my birthday and I ate the whole loaf in 3 days! Kevin never got a taste. I like how easy this recipe is, I always get intimidated with Banana Bread recipes and they never turn out. After 3 times making this I found what works for me is spraying the bread pans REALLY good and baking it at 42 minutes. They pop right out and perfect on the sides and middle! Enjoy.

    (next time I make it I will add a picture, I am working on my photography skills.)

    Banana Bread

    1 cup oil

    3 tsp. cinnamon

    1/2 tsp baking powder

    1/2 tsp salt

    2 cups bananas (about 4)

    2 eggs

    2 cups sugar

    3 tsp vanilla

    1 tsp. baking soda

    3 cups flour

    Mix ingredients well. pour into a 9 x 13 pan or into 2 loaf pans. Bake at 350 degrees for 35-45 minutes (mine took close to 42 minutes).

    Corbin’s 6 month pictures

    I wanted to surprise Kevin for Father’s day and take pictures of Corbin so he could put them in his office because he didn’t have any. I have a friend that is a photographer and had her come over. I made sure she came over after Corbin’s nap so he would be cheerful. This was the day he took a 2-hour nap, I was so excited, that meant he would be rejuvenated, right? Wrong! For whatever reason, that boy would not give us his dimpled smile, but we did get some cute ones!

    A fun tid-bit: Corbin learned to sit by himself a week later! In these photos, you will see my hand and him leaning…oh the irony.

  • Mommy burn out already?!

    Is there such a thing to be burnt out of all the mommy duties with ONE child? I knew having a baby would be rough, but did I know it would be THIS rough? Nope.  My sisters, friends, and gals at church sure fooled me by the way they made it look! I feel like I am always running around trying to catch up on my catching up! I felt like I could do it, but soon ran out of fuel mentally, emotionally, and physically I burnt out. The way I “burn out” is crying to Kevin. Kevin can always tell when I need more sleep because I get emotional and cry a lot. Lack a sleep sure does mess up your body and outlook on life. I had no idea!

    A while ago I stumbled across this article that made me nod my head so hard and fast I couldn’t believe someone validated what I felt! I hope you take the time to read it, it will make you feel better about wherever you are in your life.

    I feel like this women’s perspective is very accurate. No matter how many children we have, we are stretched to our limits. I also would like to add even if we don’t have any children, and it appears we have a “stress-free” life, we are stretched to our capacity. Helps me to stop my “judging” thoughts when I observe how other’s live their lives.

    Here are some pictures of my house when I decided to finally bake a loaf of banana bread I was so desperately craving. Mind you, my house was pretty decent before I started the loaves. I finally told Corbin “mommy needs “me” time, so I am making banana bread and I don’t care how many toys it takes for you to let me do it.”
